to-go rainbow fruit cups: watermelon all summer

What do you guys eat when you’re traveling? I’m going to guess, it’s a little unhealthier than what you eat at home. Keeping a clean diet while on-the-go is no doubt a struggle, but nothing you can’t handle with a little preparation. We are always off on our next adventure and I never leave without a full cooler of to-go rainbow fruit cups. These are a big hit for adults and kids alike and pack a ton of nutritional energy! Four months ago, I fell down the fully raw vegan rabbit hole. It’s been over a year and a half since I went vegan, but I was still looking for a way to dramatically detox my body and heal some very concerning health issues. After learning more about the healing properties of fruit, I went several weeks only eating FRUIT. Fruit all day. I can’t explain how good I felt – how much energy I had – it was incredible. The next few following weeks I added in raw vegetables and then eventually I was eating my regular vegan diet. And while I still feel good, I pine for the energy I had back on the fruitarian diet. It might be time to do it again!

Summertime is the best time to add more fruit to your diet. The farmer’s markets are just overflowing with juicy and colorful bounty. We’re talking stone fruits, berries and all the watermelon you can eat! Watermelon. I am eating so much watermelon right now, literally every day. My kids and I can go through one giant seeded watermelon a day – easy. My favorite way to eat watermelon at home is simple – sliced and topped with omega-3 rich hemp hearts!

Did you know that fruit is more hydrating to your body than straight water? Seriously the best way to keep hydrated during this insane heat is just to whir up chunks of watermelon in a blender, add a bit of lime juice and drink away. Side note, this is a great way to start a cocktail recipe, especially for a poolside blend.

Our latest excursion was a long, relaxing staycation this week at The Saguaro in Palm Springs. Say it with me, everyone – “sa-wah-roh”. We decided to spend some time in this super fun, super friendly rainbow hotel because it’s my birthday/anniversary week. Actually, today is my birthday! Yeay!

It’s so pretty, right? I think it is impossible to be in a bad mood around this place. It is also the perfect setting for a giant to-go rainbow fruit cup. All that sunshine, not a single drop of rain ever… oh wait, yes it totally did downpour an unprecedented amount on night two! It was actually kinda fun, no complaints from us.

Have a hotel stay coming and worried about healthy snacks and meals? When it comes to making the perfect to-go fruit cup, there are not a whole lot of rules. Choose what fruits you love, what you have on hand and definitely what is in season.

Here are my favorite colorful fruit combinations. Use one fruit from each color or a mix of two for even more flavor!

red: watermelon, raspberries, strawberries, pomegranate, ruby red grapefruit

orange: cantaloupe, oranges, apricots, papaya

yellow: pineapple, mangoes, grapefruit, lemon

green: kiwi, green grapes, honeydew, lime

blue: blueberries

indigo/violet: black cherries, concord grapes, blackberries, plums

There are lots of different ways to enjoy watermelon on the go this summer. The entire watermelon is edible: flesh, juice AND rind!
