This is the first of several superfood snack posts coming for back-to-school snack ideas, so keep on the lookout for more tasty ideas!  Today I’m sharing a recipe great for lunchboxes and after school snacks, not to mention movie night!  This recipes (and more to follow) are made possible by Nativas Naturals superfood powders, nori and coconut water being highlighted today, both sent to me for review.

What to do with these powerful powders?  You can toss a bit into your fresh juices and smoothies, which I certainly do, but there are so many other possibilities…

Nori is best known as the wrapping holding your sushi roll together, certainly one of its best moments.  It is seaweed, specifically when raw algae fronds are harvested, pressed into sheets and dried like paper.  The Nativas Naturals nori powder is simply the sheets milled for a more convenient and versatile product.  Nori is more than 40 percent protein, and it’s a plentiful source of fiber, vitamins, minerals, antioxidants and lignans. We’re talking major superfood here, people!

I happen to love nori in crispy, savory applications where the umami can run wild.  When trying to decide how to feature nori for you guys, I struggled with baking a cracker or going the popcorn route.  My daughter get enough popcorn and it is super easy so I went that direction.

For a half cup of popcorn kernels add 2 tsp of nori powder and 1 tsp of coconut water powder.

To counterbalance the nori, sweet freeze-dried coconut water powder is the perfect addition, but coconut sugar would work as well.  Now your popcorn snack is also coated with five key electrolytes (plus additional essential vitamins and minerals)!  This coconut water powder is meant to be rehydrated and that’s exactly what we did for beverages on the side.  It only takes 1 Tablespoon to make a cup of coconut water, so imagine the savings!  Dare I say it tasted even better than fresh coconut water from a can?  So flavorful!

My 6.5 year old loves “nori popcorn” even after I told her what nori was.  I will admit I have an adventurous eater, a real foodie in training, but you don’t have to disclose what nori is.  The popcorn is not “fishy” like you may think, simply savory and very unique.  So, so yum.

    My kids LOVE popcorn so this is something I would love to see if they liked. You never know. :)
