Persimmon and Pistachio Biscotti {dipped in chocolate}

With the hulabaloo happening around the holidays, we’re all planning, baking, and looking for shortcuts.  I’m one of those people who likes to create more work for myself than necessary, but this season has brought me to my knees!  My busy season runs clear through January with two kids birthdays — one turning 7, the other 1.

When I heard about the new Hershey’s™ Spreads, I knew I had to make biscotti.

Biscotti isn’t difficult to make, but somewhat time-consuming, in that you have to be around for awhile, but most of that time is spent in the freezer, in the oven or resting.  It creates pockets of time to multitask — this go around it was wrapping the last of my kids’ presents and giving myself a much needed mani-pedi before my husband’s work Christmas party tomorrow.  The key is to start your biscotti early, because if you start it at 9 pm (not that I’ve ever done that…) you’ll be up until 4 am.  But at least the the spread is ready to go, straight from the jar — and oh, how delicious it is!

Persimmons are the way underrated and underused winter fruit.  I originally planned on creating a cranberry and pistachio biscotti, pretty textbook holiday in both flavor and color.  But, then I was looking at this giant bowl of persimmons on my counter (that I’ve been waiting to ripen for forever and a day) and I felt sad.  The persimmon deserves better and Pinterest should be flooded with recipes based around this ultra fab, tasty fruit!  So here goes my contribution.

Persimmon and Pistachio Biscotti


  • 3 cups brown sugar
  • 1 cup unsalted butter, whipped
  • 2 teaspoons apple bitters (or vanilla extract)
  • 4 eggs
  • 1 2/3 cups ripe persimmons, pureed
  • 5 1/2 cups flour
  • 2 teaspoons ground Ceylon (true cinnamon)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon allspice
  • 1 cup chopped pistachios
  • 1 cup chopped almonds


  1. In the bowl of a stand mixer, cream together butter and brown sugar.  Really whip it.  Add in bitters (or extract), and eggs and blend. Stir in persimmon puree, blend.
  2. Whisk together dry ingredients and a separate bowl. Add the dry ingredients one third at a time into the persimmon mixture, stirring just to incorporate. Stir in the nuts.
  3. Lay out plastic wrap, layering two pieces to form a larger sheet, and place half the mixture in the center.  Form a flat log shape. Repeat with the other half.  Wrap each completely in the plastic wrap. Place in freezer. Chill for at least two hours.
  4. Preheat oven to 375 degrees. Unwrap one log and flip onto well-floured board. Shape into a 15 x 4-inch flat loaf. Transfer to a large parchment-lined baking sheet.
  5. Place into oven and immediately turn heat down to 350 degrees. Bake for 45 minutes until springy but firm to the touch. Cool 30 minutes.
  6. On a diagonal, cut 1/2-inch slices from the load, arranging cut sides down onto the lined baking sheet.
  7. Bake 25 minutes until golden, flipping halfway.
  8. Transfer to rack to cool completely.
  9. Biscotti keep for 3-4 days in an airtight container. They can be frozen in foil for 1 month.
