healthy traveling: Keto coconut oil fudge

Often when we travel, our healthy lifestyle habits get put on the back burner. Our clean diet is replaced with fast and convenient foods. That was me too, until I realized my energy levels were dipping really low when my diet went down the tubes. If anything, you need MORE energy while traveling, so it is imperative to keep at least a couple clean meals in your day. … and it isn’t as hard as it sounds.
This is why, when I hit the road, I always have a packed cooler with me. This past week I took the kiddos on a little trip to Conejo Valley where we hiked, beached and explored. It was SO fun and SO exhausting. I definitely needed all of the energy I could get to keep up with my kiddos on this quick adventure. The views were well worth the effort! Back at the hotel, I was thrilled to find a refrigerator. That’s kind of rare now it seems! This was my fridge at the beginning of the trip – jars of fruit, chickpea “chicken” salad and my coconut oil fudge.
While I follow a plant-based diet filled with fresh fruit, I did watch a really interesting Keto documentary the other day on Netflix. Though I won’t be switching over to a Keto diet, I did realize that I wasn’t eating any fat. Like, very, very little fat. It wasn’t on purpose – I just eat clean and simply. So that was eye-opening and I decided to add fat bombs to my daily life. They are delicious so it wasn’t hard!
The ketogenic diet is a low-carb, high-fat and moderate-protein diet that shifts the body’s metabolism away from carbs and towards fat and ketones, putting the body into a metabolic state called ketosis. In short, it positions the body to burn fat as fuel. Interesting, right? If you haven’t watched The Magic Pill on Netflix yet, I highly recommend it!
For the sake of trouble-free traveling, I prefer to bring a brick of coconut oil fudge that I can cut up at the hotel. This recipe is my favorite – rich, chocolatey, coconut-y and so satisfying. I like to mix in a nut butter, any kind you like will do. This recipe is seriously foolproof – you can’t mess it up! My secret ingredient issssss….

Keto Coconut Oil Fudge
- 1 cup coconut oil
- 1/4 cup cacao butter
- 1/4 cup nut butter
- 1/2 cup cacao powder
- 2 scoops Keto Collagen
- pinch of pink Himalayan sea salt
- In a bowl, whip and combine coconut oil, cacao butter and nut butter with a hand mixer. You can choose to melt it instead, but I think whipping gives a nicer texture. Once blended, stir in cacao powder, Keto Collagen and sea salt.
- Line a bread loaf pan with plastic wrap and pour in fudge. Place in freezer for 20 minutes. Cut into 1 in x 1 in squares and enjoy. Keep in the refrigerator.
