School is back in session, full swing, craziness every day!  I wouldn’t say that we have a perfect routine down, but we are definitely finding a rhythm.  Making a busy family schedule work is all about compromises and finding shortcuts.  Living an active and clean-eating lifestyle is something I’ll never compromise on – but I do thrive on shortcuts like these make-ahead Vegan Key Lime Tarts that are the perfect after school treats!

I keep a gluten-free vegan diet (as best I can) and the rest of my family enjoys everything else on the food pyramid.  While I don’t push my diet onto my family, I do have a heavy influence on the menu.  We definitely eat plant-based meals most of the time and I’m a bit obsessed with sneaking superfoods into everything we eat.

See those gluten-free vegan tart shells above?  Here is a perfect place to pack in nutrition and superfoods.  I’m all about no-bake, raw tarts and since the kids adore them as well, I make them often.  The crusts quickly come together in a food processor, you can add in all kinds of nutritious ingredients and they freeze super well.

Let’s talk filling! You can go with just about any fruity flavor your kids like.  I’ve made a huge variety, blueberry, strawberry, peach, vanilla, even chocolate.  Anything goes!  One of our family’s favorites, though, is key lime.  Sweet, tart, tangy… what’s not to like?

After a long day of learning, what is better than a homemade treat?  Afterschool snacks are a fantastic tradition to keep all school year long.  Homemade takes time though, totally get that, so finding recipes you can make in large batches to freeze are perfect!  You can even serve these tarts frozen like ice cream – so good and so fast!

I’ve tried a variety of different combos for these raw fillings, but this recipe is my favorite to date.  I’m pretty sure I won’t be experimenting anymore.  The secret ingredient that adds tang, creaminess and a punch of flavor?  So Delicious Dairy Free® yogurt alternative. I’m making key lime tarts, so clearly I used So Delicious Dairy Free® Key Lime!

The first modification I ever made to my diet was to cut dairy out.  I’m lactose intolerant, unfortunately, and despite my great love for cheese, I have to avoid dairy or suffer the consequences.  It wasn’t just cheese I was missing, but also yogurt.  Incorporating probiotics into your diet is so important for a strong immune system,  working digestive function and other health benefits.  Vegans and other dairy-free people don’t have to miss out now with So Delicious Dairy Free®!

  • pinch of salt

  • 2 cups raw cashews, soaked for 4+ hours
  • 2 containers So Delicious Dairy Free® Key Lime yogurt alternative
  • 1/3 cup coconut oil
  • 3 Tbl raw honey (or agave)

  2. Clean food processor and then pulverize soaked cashews until creamy.  Add in remaining ingredients and blend until smooth.  Adjust to taste (add honey for more sweetness, key limes for more tartness, etc).  Scoop filling into frozen crusts and smooth out the tops.  Sprinkle lime zest over top and place into freezer for 2-3 hours before serving.  Serve chilled.
