Easter Egg lemon bars with a cookie crust {Spring Fling}

I am so happy that spring is nearly here!  The weather is getting so warm here in the desert, outside is paradise and it has put me in the entertaining mood. When it comes to decorating a tablescape, Spring is my favorite season I think.  I just love the bright pastels, the newly budding flowers and Easter is my favorite holiday.  Easter has similar religious significance for me as Christmas, and it still has that exciting gift giving aspect…but it is so much less stressful than Christmas! Let’s just say, the Easter Bunny definitely has it easier than Santa.

This season is about so much more than Easter Sunday, though.  The whole season is about new beginnings.  The snow melts away revealing budding tulips and that is why I love Spring.  When I was tasked to have an Easter celebration, I knew that is just where I would start: with the tulips!  Tulips, wheatgrass in spring colored coffee mugs and lemons, so many lemons!


Do you spot my festive beer bunnies out front?  We also made them in root beer versions for the kids!  We simply disassembled kids Easter costume accessories and hot glued them to the bottles.  So easy!


Entertaining should be fun, not stressful.  We shouldn’t spend the whole night cooking in the kitchen, but rather spending time with our friends and family.  I recently gave myself permission to use some shortcuts and stop trying to do it ALL.  This celebration required minimal time spent in the kitchen and the baking was all done ahead of time.  This way, I actually enjoyed my guests and had such a great time!

I sliced them rather petite so they were more refined party food.  People could easily grab a small slice and go about their night without having to hold a big sloppy slice for 20 min.  I recommend doing the same for entertaining larger groups!


For desert, I decided to capitalize on our lemon tree at our house.  I grabbed a basket full and ran off to whip up some delicious lemon bars!  Not just any lemon bars though… I wanted to make my crust out of the new NESTLÉ® TOLL HOUSE® White Chip Lemon Refrigerated Cookie Dough found at your local Walmart.  The citrus junkie that I am, this is by FAR my favorite refrigerated cookie dough.  I bought so many packages!

Find the new White Chip Lemon Refrigerated Cookie Dough at Walmart in the Dairy section either on the wall with other cookie doughs or in the center featured refrigerator items!

It made the perfect crust for the lemon bars, like the two were always meant to be together! Simply press the dough into the bottom of the pan and bake until light golden brown and voila! Your crust is ready for your lemon mixture.

I wanted to do something fun with the lemon bars since my daughter had friends coming over as well.  Keeping with the Easter theme, we cut them out into egg shapes with cookie cutters.  I actually ended up using a squished football cutter I had lying around!  For the majority of the bars, we topped them with sifted powdered sugar and stacked them with card stock rectangles in between… sift, stack, sift, stack.  Have your kids help you with this step.  My daughter absolutely loved being my sifter!

Then the special ones received special treatment.  They got decorated by the kids!  I actually really love this idea and am thinking it will become a tradition in our home for the years to come!  The kids had a blast and the pastel tubes made doodling on the bars super easy.

 These sweet and tart desserts are always crowd pleasers and with the addition of a more stury cookie crust, they are pretty great party finger foods! Make sure to add lots of lemon, juice, zest and extract! Celebrate the lemon this spring!
