Chicken Parmesan Pizza {game day food}

I created this game day Chicken Parmesan Pizza recipe as a part of a sponsored post for Ragú and SocialStars. #NewTraDish

Yesterday was a football Sunday, but it had also been a long weekend for me and I was… well… not feeling 100%.  But alas, the guys were coming over and they wanted food — panic.  I wasn’t in the mood to create something complicated so I searched the fridge for leftovers and found some beautiful oven baked Chicken Parmesan.

**ding ding ding**

I flung a refrigerator dough onto the counter and starting building a pizza worthy of Game Day.  I spread a pizza sauce onto the dough, topped with chopped up breaded chicken, parmesan and mozzarella cheese and slid into the oven.  Well the guys went crazy for it.  It was filling and so tasty!

I decided to create a recipe without the use of leftovers so I can make this pizza whenever I want.  A couple changes needed to be made, but it ended up tasting even better fresh!  While constructing my recipe I thought of two Ragú® recipes, one for Oven Baked Chicken Parmesan and another for Chunky Gardenstyle Pizza.  Together they created a great mash-up of traditional family foods.

With the chicken parmesan I made this past weekend, I used Ragú Mushroom, which was the perfect pairing, so I assumed I stick with that for my pizza.  The mushroom gives such a rich, umami flavor that I decided to add fresh mushrooms to the pizza to really bring out the flavors in the Ragú® sauce.  I recommend crimini mushrooms, which are brown Italian mushrooms usually found right by the white buttons.

Creating the mini chicken parm bites on this pizza creation is pretty brilliant.  Every bite is packed with flavor… just look how adorable they are before the mozz melts:

Make sure to top your cooked pizza with fresh herbs, a basil chiffonade being my personal favorite for this Italian recipe mash-up!

Chicken Parmesan Pizza

1 lb raw chicken tenders, pounded flat
3 Tbl real butter, melted
1/3 C Panko, more if needed
6 oz Crimini mushrooms, sliced thickly
1 refrigerator pizza dough (or homemade)
1/3 C Ragú® Super Chunky Mushroom Sauce®
8 oz fresh mozzarella balls, cut in half
fresh basil, chiffonade (thin ribbons)
salt and pepper to taste

  1. Set oven to 450 degrees and pull out refrigerated dough to rest on the counter.
  2. Pound out chicken, dredge in melted butter and then in Panko mixture (with salt, cayenne). Place on a baking sheet and bake for 8 minutes. Flip and cook for another 4.
  3. While the chicken is cooking, spread or roll out your rested dough to form a 13″ pizza on a pizza stone. If you have trouble with your dough sticking to the stone, sprinkle on cornmeal or just use parchment paper. Spoon Ragú® Sauce onto dough and spread in a circle motion, stopping when you reach near the edges.
  4. When the chicken is done, raise oven to 475. Cut chicken into bite-size pieces and place evenly around on the sauce. Top each piece of chicken with more sauce and a half globe of mozzarella. Add more mozzarella halves to the mushrooms and anywhere else you’d like. Sprinkle with salt and pepper, slide into over (475 degrees) for 10 minutes.
  5.  Chiffonade fresh basil and top the pizza while it cools.  Slice and serve with beer and enjoy the game!

Hey there! I just wanted to ask if you ever have any problems with hackers? My last blog (wordpress) was hacked and I ended up losing months of hard work due to no data backup. Do you have any solutions to stop hackers?

You really make it appear really easy with your presentation however I find this matter to be actually something which I feel I might never understand. It kind of feels too complicated and very large for me. I’m having a look ahead on your next put up, I’ll attempt to get the dangle of it!
