Banana Apricot Smoothie {breakfast of champions}

Breakfast is a 4 letter word in my house.  I am not a morning person, neither is my husband.  Our kids, however, rise with the sun.  Groggy with half-closed, mascara smeared eyes (stop judging me) I fumble around the kitchen to make breakfast for the kiddos.  Pancakes are usually the request and it’s a miracle I haven’t severely burned myself in the process, yet.  Lately though, I have been relying on smoothies, my personal breakfast preference as well, to fuel the kids for the day. We are a smuicing (juice and smoothie) family already, so adding Carnation Breakfast Essentials® Powder to our recipes was very easy.  With 21 Vitamins & Minerals and 13 grams of protein, Carnation Breakfast Essentials will get the kids revved up for a day of learning and exploring.

Have you been eyeing the gorgeous apricots that are in season now?  I have been stocking up while I can, cutting and freezing a bunch for later in the year.  I love apricots paired with banana and vanilla so this smoothie is a real rockstar.  Packed with flavor and nutrients, everyone will love this recipe.

I really wanted to make Carnation Breakfast Essentials the star, so I decided to play up the vanilla flavor.  For the liquid I used vanilla soy milk and I also added a teaspoon of FRESH vanilla bean.  If you are not using fresh vanilla bean, you have no idea what you are missing out on.  That imitation extract has nothing on what comes out of these pods. The aroma alone will make your knees wobble! Simply split the pod lengthwise and use the back of a knife to run down each side.  Save the pod for later use (infusing soups, broths or vodka!).

You know those bananas that have been sitting around for too long?  The ones with the brown skin?  Before you throw them out, peel them, slice them and pop them in the freezer.  They will be perfect for your smoothies and will eliminate the need for ice.  To keep them from freezing in big clumps, cut and lay out on parchment or wax paper on a baking sheet.  Place into the freezer to freeze, later pop them off and into a bag.

Smoothies are just the best.  They take so little time, perfect for busy mornings, and you can put pretty much anything you want in there!  I’m always hiding ingredients in my smoothies and the kids are none the wiser.

Banana Apricot Smoothie


1 packet Vanilla Carnation Breakfast Essentials
1 cup vanilla soy milk
1 frozen banana
1/4 cup plain greek yogurt
2 apricots, chopped
1/4 cup dried apricots, chopped
1 tsp vanilla bean seeds


Blend.  Serve = )

My daughter says this is her favorite smoothie and I am the best smoothie-maker ever.  If you are looking to please the kiddos while also pumping them full of vital nutrients, smoothies are a great way to go.  Adding in Carnation Breakfast Essentials just really puts it over the top.  21 essential vitamins and minerals, 13 grams of protein and as much calcium as a 6 oz yogurt, this powder is truly superfood!
