Welcome to 2015!  I bet you thought I would be posting another juice cleanse post, didn’t you?  Yes, I love a good juice cleanse but seeing as how it is frigidly cold in the desert right now, I’m going warm.  The right soups are a great way to detox the body and have additional benefits to juice like FIBER and protein!  Just focus on packing your soups with a variety of vegetables and leave out the animal products — good to go!  Remember – no caffeine, no booze.

We’re currently in the middle of moving to our new home (YEAY) so it seemed like the right time for easy soups.  I took a whole day and just made 6 soups to get us through a few days so I don’t have to think about it while I pack boxes.  This detox gives you a bunch of energy – just what I need more of right now.  Some people have a difficult time sticking to a juice cleanse, there is after all, nothing to chew.  Soups offer a bit more in the texture department and you can even leave the veggies whole – just chop them rather small so they are easy to digest.

Okay, I’m starting this soup cleanse series with a recipe I have adapted from the one found on Thumb in Plum blog.  I LOVE a good potato leek soup but wanted a variation of it – something with a bit more interest.  Radishes!!  Poor radishes rarely get the attention they deserve but they are packed with nutrients and are naturally detoxifying (and cancer fighting) – plus they add a nice subtle kick to this creamy soup.

I don’t consume ANY animal products while cleansing (already missing my goat cheese) so I had to switch up a few things to make it work. Its a pretty standard potato leek soup recipe – a very delicious and simple soup that is magical on a cold day!

To maximize the leek flavor, clean the leaves and put them right in the pot with the soup!  This is a very important step many people skip over.

Just make sure to remove the leek leaves before you blend the soup!

Speaking of saving the greens, if your radishes have greens attached, don’t throw them away! They actually have an even higher nutritional value than the bulbs – same thing with beets!  Throw them in a salad or saute them – or munch them raw.  I used some to garnish this soup — superb flavor!

Vegan Radish Potato Leek Soup

Ingredients
  • 3/4 lb radishes, halved
  • 3 yukon potatoes, peeled and cubed
  • 2 leeks
  • 1 medium onion, diced
  • 1 Tbl garlic, minced
  • 32 oz vegetable broth
  • 2 Tbl coconut oil
  • 1 cup almond milk
  • heavy pinch kosher salt
  • 1/2 tsp white pepper
  • lemon juice

Directions

  1. Cut off the leek leaves, wash and set aside.  Slice up your leek stems and throw into a stock pot with coconut oil over medium heat.  Immediately add onion, radishes and garlic and cook until the onion is translucent.
  2. Add in potatoes and broth as well as the whole leek leaves (for flavor),  Bring to a boil, reduce to simmer.  Simmer for about an hour.
  3. Discard leek leaves and season. Blend with an immersion stick blender – add in milk until you reach your desired consistency.
  4. Portion out and serve with a quick squeeze of a lemon and fresh herbs or radish leaves.
