We’re growing lots of tomatoes in our garden this year again. Thankfully our cherry tomato plant is doing very well. We’re getting a steady supply of them since early Fall. Sometimes I run out of ideas on how to best utilize them since we only get a small handful that are ready every few days. I came across this idea for Tomato Basil and Mozzarella skewers, which I love.
Assemble the tomatoes, basil and mozzarella onto a skewer. You can find the mozzarella balls at Whole Foods, they even have them marinated in Italian seasonings and olive oil. Once assembled, arrange the skewers on a plate and drizzle them with balsamic vinegar. Lastly sprinkle them with sea salt and fresh cracked black pepper. I suggest letting them marinate for up to an hour if you can.
