Strawberry Jalapeño Margarita {fresh. fruity. spicy. boozy.}

Summer is at full throttle… literally throttling me with intense heat here in the desert, which is keeping me by and in the pool, refreshing beverage in hand.  Summer always makes me crave tequila, a liquor that puts me in nothing but the best of moods.  It’s also bikini season though, so I try and keep the cocktails low-cal (but never low-flavor)… enter Sweet’N Low.

Today is feeling like a margarita kind of day.  I’m not talking about that icky powder mix or something that comes out of a machine named after a Jimmy Buffet song though.  I’m thinking freshFruitySpicyBoozy.

This summer I’ve been on a tequila and jalapeno kick.  I’m not even a person who can handle a lot of heat, which is why it is all about balance.  If you’re going to kick the heat up, you better bring some sweetness and some acid to counter, which is why I LOVE a good Strawberry Jalapeño Margarita, with an uppercut of lime.  Perfect for a summer afternoon, this cocktail brings the party.

Let’s first talk tequilas.  I need you to pay attention to this one crucial point.  Please choose a good quality tequila.  It doesn’t have to be the most expensive (though that doesn’t hurt) but it must be something you can keep down without the assistance of a lime wedge and salt… we’re grown-ups now.  I’m pretty fortunate living in Southern California as our liquor stores have some really amazing options that other parts of the country never see, but there is affordable, quality choices in every city.  Do a little research and your tomorrow-self will thank you!

If you make crafted cocktails at home, you’ve undoubtedly made a simple syrup before, which is just equal parts sugar to water, boiled and dissolved.  For this drink I say, save the sugar for the rimMake a Sweet’N Low simple syrup by dissolving 24 packets in 1 cup of water.  Easy substitute for sugar — a low-cal solution!

Okay, let’s bring out the fresh ingredients a.k.a. the flavor! Strawberries, jalapeño and lime. Use these all for taste and garnish.  The greens and reds are super festive for entertaining so have fun with them.  If you prefer your margarita blended, just drop it in the blender, maybe add a few extra cubes of ice and you are good to go.

Strawberry Jalapeño Margarita

Ingredients

3/4 oz fresh lime juice
1 strawberry
1/2 diced fresh jalapeño
1/2 oz Sweet’N Low simple syrup
1 oz Cointreau
1 1/2 oz tequila
sugar for rim

Directions

Take a margarita glass and press the rim into lime juice.  Then place the rim in sugar.  Put all ingredients into a shaker.  Shake.  Strain over ice into sugar-rimmed glass.  Garnish with strawberry or lime and jalapeño.  Enjoy!
