Skinny Pumpkin Date Smoothie {Hamilton Beach} #smoovember

November has come to an end, believe it or not, and so ends “smoovember” as well, but no reason to stop creating and enjoying your smoothies!

One of my new favorite appliances in the kitchen is the Single Serve Blender from Hamilton Beach.  Sometimes you just don’t want to pull out the full size blender and full size carafe. Sometimes it’s just you.  With the Single Serve, you can blend in and drink from the same vessel, minimizing clean up and making it easy to take your smoothie to-go.  The one button operation makes it so easy, my 6 year old can operate it.  It is also super compact, even the cord has a spot to stay winded around, you know I love that!

With Thanksgiving over, I’m sitting here looking at all the leftover pumpkins and wondering “what in the world am I going to do with all this pumpkin?”  It feels wrong to throw all of them in the compost bin or garbage so I’m going to try and consume at least some.  But, I’m done with pumpkin muffins and pumpkin pie — don’t even say pumpkin pie to me right now.  I still have a Thanksgiving food baby! Let’s go lighter with the pumpkin and make a smoothie, highlighting the delicious gourd and sweetening with one of my favorite smoothie ingredients – dates.  I heart dates and, lucky me, there are giant date farms here in the California desert.

This is my perfect pumpkin smoothie… just the right amount of sweet, spice and creamy goodness. It’s also vegan!

Skinny Pumpkin Date Smoothie

3/4 cup unsweetened almond milk
1/4 cup fresh pumpkin puree
1/2 cup frozen bananas
2 medjool dates, chopped
1/2 tsp combined freshly ground nutmeg, cinnamon and clove
handful ice

  1. Add milk, pumpkin puree, dates and spices.
  2. Add frozen bananas and ice.
  3. Pulse.
  4. Blend until smooth

The Single Serve Blender handles this and other smoothies easily – shocking me, really.  But blend smooth it did, and how great you can just take the carafe and go? It features a sliding drink spout so the lid stays on tight in the car.  Genius!
