pumpkin pie apple muffins {YoCrunch}
Big fan of the flavors of fall, I was excited to see what YoCrunch had coming my way for review. The two new flavors, Pumpkin Pie Parfait and Apple Pie Parfait are both super yummy and embody the seasonal spices and aromas. My daughter is in love with these personal yogurt cups because they are not only tasty, but fun. She enjoys to mix the yogurt with the bottom goodness and top with crunchy graham cracker crumbles… a perfect bite. They are great sizes for school lunches as well.
I wasn’t planning on creating a recipe for this post – it was purely a post of opportunity. It was Sunday morning and I wanted to make my family pumpkin muffins, and – oh those bananas are beyond ripe, better use them too. Now we’re at Pumpkin Banana Muffins. I did what any good mom would do, I searched Pinterest. I came across this recipe from Julia’s Album for Pumpkin banana muffins with apples and cinnamon.
Perfect!
But wait… I don’t have any plain Greek yogurt in the fridge. As usual, I have begun creating the recipe without making sure I have all the ingredients. And then it hit me – I have the new YoCrunch Pumpkin Pie Parfait Yogurt cups in my fridge. Let’s try it!
Pumpkin Pie Apple Muffins
Ingredients:
- 4 Tbl unsalted butter, creamed
- 1 cup regular white sugar
- 2 eggs
- 2 very ripe bananas, mashed
- 2 4oz cups YoCrunch Pumpkin Pie Parfait Yogurt
- 1/2 cup pumpkin puree
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 large apple, cored, chopped into 1 inch chunks (do not peel)
1) Preheat oven to 350. Prepare muffin tin (12 count) with either liners or cooking spray and set aside.
2) In your stand mixer bowl, cream (paddle attachment) butter at a high speed for 1 minute. Add in the sugar and cream until thoroughly combined. Add eggs and continue to cream until you get a very smooth consistency.
3) Add mashed bananas, pumpkin puree, YoCrunch yogurt cups (2) and vanilla extract. Continue to cream and combine.
4) In a separate bowl, combine your dry ingredients: flour, baking powder, baking soda, cinnamon and pumpkin pie spice.
5) Add your dry ingredients to your wet. Combine with a large wooden spoon slowly – do not overwork. Fold in the apple chunks.
6) Fill your muffin tin, 3/4 full in each cup. Top muffins with the graham cracker crumble from the YoCrunch yogurt cups (smash up some more graham if you need more).
7) Bake for 25 minutes. Use a fork to pop muffins out and allow to cool on a wire rack. ENJOY!
The apple chunks inside are delicious surprises, a nice texture change that has that really homey flavor.
I like to bake my muffins without liners and then dress them up afterwards. With these delicious fall flavors, you could easily turn these into a Thanksgiving snack (or breakfast component). All you need is a little parchment paper, string and feathers…
