pineapple spa water mocktail { #Outshine }

Outshine Fruit Bars have taken over my freezer. Here in the desert, we take pride in our frozen fruit bars. They are absolutely mandatory once the spring heat kicks in and the best on the market are of the Outshine variety. Thinking beyond the stick, these frozen fruit bars are absolutely fabulous in smoothies, cocktails and, my favorite, mocktails!
My husband, a former bartender, manages a bar/restaurant here in Palm Springs. Needless to say, we have great friends who are bartenders and they are always in our house mixing, muddling and garnishing. Our seven year old loves them (our friends, not the cocktails) and they never want her to feel left out. So a companion mocktail is always sliding across the island for her.
Mocktails are a perfect afternoon beverage to keep things festive and light for adults or kids. Living in sunny SoCal, my preferences always lean to light and bright flavors. I happen to love cucumber and mint water, some call it spa water. I also love pineapple and cucumber together. Do you see where I am going here?
So typically, I would be muddling my ingredients with ice. Better idea? Muddle with Outshine Fruit Bars in coordinating flavors. For this mocktail, I used both Outshine Pineapple and Outshine Coconut Waters with Pineapple. You could use just one variety if you would like.
Pineapple Spa Water Mocktail
Ingredients:
1/3 Outshine Coconut Waters with Pineapple Fruit Bar
1/3 Outshine Pineapple Fruit Bar
4 cucumber slices
5 mint leaves
3 oz 100% pineapple juice
soda water
Directions:
Muddle the fruit bars, cucumber slices and mint leaves. Pour in pineapple juice, top with soda water. Garnish with cucumber.
The cucumber and mint give a very spa-like feel to this mocktail. The pineapple though, sweetens up the drink and you will find yourself having many! Go ahead, this is one hydrating drink with lots of nutritional benefits.
Speaking of spa water, I am a huge fan of coconut water, HUGE, enormous fan. When I saw Outshine Fruit Bars came in coconut waters (with pineapple or banana) I was hooked. These varieties are always in my freezer!

Today, I went to the beach front with my kids. I found a sea shell and gave it to my 4 year old daughter and said “You can hear the ocean if you put this to your ear.” She put the shell to her ear and screamed.
