Down here in Southern California, our food is heavily influenced by Mexico. You will see a Mexican restaurant on every corner and I couldn’t be more pleased with that. This past weekend I decided to have friends over to watch some seasonal basketball and celebrate Mexican flavors via rolled tacos, taquitos, Mexican street corn (elotes), tomatillo salsa and a raw vegan lime avocado pie — a very yummy spread indeed!

Entertaining can be stressful if you make a menu that is too ambitious. Unless Bobby Flay is your guest of honor, go easy on yourself. Create a menu with similar ingredients to save on the grocery bill and take shortcuts where you can. My shortcut this time was Delimex Rolled Tacos and Taquitos. These frozen snack/meal starters are perfect for parties as they are finger foods with no mess. I used to eat these all the time as a kid, they were always in the freezer. My favorite variety these days is the Chicken and Cheese Taquito – so yum!

To pair with the taquitos, I knew I would need a couple sides.  Keeping with the theme of easy entertaining (especially for a group of guys watching basketball) I popped by my local Mexican mart for some fresh tomatillo salsa and freshly fried tortilla chips.  Easy peasy! I also grabbed refreshing sodas my guests could just grab and go. Orange lollipops were also mandatory, of course.


If you have been to Mexico, you have no doubt run into the Elotes Man, a guy with the tastiest street cart you will find down there.  I cannot describe to you how great Mexican Street Corn (Elotes) is.  Okay, yes I can.  The corn is charred on the grill, slathered with creamy, tangy mayonnaise/crema blend, topped with salty cotija cheese, sprinkled with spicy, flavorful pepper mix (chiles de arbol + guajillo) and finally topped with fresh cilantro.  I mean, it is the best way possible to eat corn.

For my party, I thought it would be most fun to set it up an elotes bar so everyone could make their own corn.  I piled the grilled corn up next to all the toppings and everyone has free reign to make their corn as cheesy or as spicy as they wanted!

I am now 100% addicted to Mexican street corn and couldn’t imagine going back to the ol butter and salt method of my previous life!


There was a lot of spice floating around this spread, so I decided to also make a chilled desert, a raw, vegan desert.  This is a no bake lime pie basically.  The crust is nutty and sweet, a blend of almonds, pecans, coconut, dates, agave nectar and lime zest.  Best crust EVER (gluten-free) and you don’t even have to bake it, although you certainly could!

The filling I chose was lime-avocado, bright and refreshing – perfect for Mexican food.  This mixture will need to be chilled to hold together, frozen is even better.  I prefer to freeze these pies, then a few minutes before serving I let them sit out to warm up a bit.

These little pies are for everyone — raw, vegan, gluten-free, dairy-free and full of nutrition!  Kids love them, even those who don’t particularly care for avocado like my daughter.  She has no idea. ;)

For decor, I simply searched around town for orange and black items, some netting, a few basketballs… keep it simple, right?  I did decide to make my own hoops that I placed in corners around the house.  You can make them too, you only need an embroidery hoop, a basketball net, orange duct tape and a few pipe cleaners.  I found my nets at the 99 Cents Only store, so the cost of this craft was really low!
