Mexican Chocolate Coffee Cake {with a kick}

Coffee.  Coffee Cake.  Mexican Coffee.  Mexican Coffee Cake.  Naturally when I heard Coffee-mate released two new Latin-inspired flavors, I ran off to the store to grab them both, along with coffee and chocolate, both of the Mexican variety.  My mornings are now impossibly delicious.

The two new Coffee-mate flavors are: Abuelita® Mexican Chocolate and La Lechera® Dulce de Leche.  Seriously delicious, and a refreshing break from my norm, these flavors are impossible not to fall in love with.

Mexican chocolate is magical.  Flavored with cinnamon, almonds and vanilla, it is an experience.  It pairs well with a variety of other ingredients from savory to sweet, but it is especially wonderful in desserts and beverages.  The Coffee-mate Abuelita Mexican Chocolate sure does the ingredient justice.  Creamy and rich, it has a powerful note of cinnamon to really kick your morning coffee up a notch.

Coffee-mate creamers are not just for coffee, though.  They are great substitutes for milk, especially in baking.  I tested out my favorite Mexican Chocolate Coffee Cake recipe with the Abuelita Mexican Chocolate creamer and wow — what an improvement on an already perfect breakfast bite!

Fresh out of the oven, your coffee cake will be golden brown and covered with gooey Mexican chocolate and toasted walnuts… simply stunning and … just you wait … delicious!

Enjoy with a nice hot cup of coffee, touched with the Coffee-mate Abuelita Mexican Chocolate creamer… oh mornings, I now love you.  Drop a bit of fresh bits of Mexican chocolate into your coffee and transport to an even higher level!

Slice it up and enjoy… just look at all that texture!  The cake is sweet but with a nice (and subtle) kick of heat from the cayenne.  You could leave it out, but I urge you not to!

Mexican Chocolate Coffee Cake recipe

Mexican Chocolate Coffee Cake

Ingredients: 

  • 1/2 cup milk
  • 1/2 tsp white vinegar
  • 1 cup brown sugar
  • 1/2 cup unrefined sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 cups all-purpose flour
  • 3/4 tsp salt
  • 1 tsp cinnamon – Ceylon (true cinnamon preferred)
  • 1 tsp baking soda
  • 1/2 tsp cayenne
  • 1/2 cup Coffee-mate Abuelita Mexican Chocolate creamer
  • 1 large egg
  • 1 tsp vanilla extract
  • 3/4 cup chopped walnuts
  • 1 disk Mexican Chocolate, roughly chopped

Directions:

  1. Preheat oven to 350°F. Grease a 9-inch square baking dish.
  2. Combine the milk and vinegar; set aside.  Toast walnuts in a dry skillet over medium high heat, stirring constantly until toasted (about 5 minutes). Set aside.
  3. In a stand mixer with paddle attachment, cream together butter and sugars until light and fluffy.
    Add in flour, salt and mix on medium speed until mixture becomes a crumb.  Remove 3/4 cup and move to separate bowl, add Mexican chocolate and walnuts to the 3/4 cup of crumbs.  Set aside for later.
  4. Into stand mixer bowl, add in milk, Coffee-mate creamer, whisked egg and vanilla, baking soda and cayenne, mixing until just combined.
  5. Pour the batter into greased dish. Top with reserved crumb/chocolate.  Bake for 45-50 minutes or until top is golden brown and a clean toothpick comes out from the center.
  6. Cool.  Serve.  Enjoy.

    I have never heard of Mexican Coffee Cake! It sounds delicious and something my DH would love!! He has a huge sweet tooth but loves a good firey kick!

    I was wondering if you ever considered changing the page layout of your website? Its very well written; I love what youve got to say.
