School is back in session, full swing, craziness every day! I wouldn’t say that we have a perfect routine down, but we are definitely finding a rhythm. I keep a gluten-free vegan diet (as best I can) and the rest of my family enjoys everything else on the food pyramid. While I don’t push my diet onto my family, I do have a heavy influence on the menu. We definitely eat plant-based meals most of the time and I’m a bit obsessed with sneaking superfoods into everything we eat.

I’ve tried a variety of different combos for these raw fillings, but this recipe is my favorite to date. I’m pretty sure I won’t be experimenting anymore. Vegan Key Lime Tarts
- 1 cup walnuts
- 5 pitted dates
- 1 Tbl chia seeds
- 1 Tbl coconut oil
- 1 Tbl agave nectar or maple syrup
- pinch of salt
- 2 cups raw cashews, soaked for 4+ hours
- 2 containers So Delicious Dairy Free® Key Lime yogurt alternative
- 1/3 cup coconut oil
- 3 Tbl raw honey (or agave)
- 1/3 cup fresh lime juice
- 1-2 Tbl lime zest
- salt to taste
- In a food processor, pulverize walnuts into powder and small bits. Add remaining ingredients and pulse until it comes together. Press into 4 – 8 tart tins, depending on their size. Place lined tins on a baking sheet and put it into the freezer to firm up.
- Clean food processor and then pulverize soaked cashews until creamy. Add in remaining ingredients and blend until smooth. Adjust to taste (add honey for more sweetness, key limes for more tartness, etc). Scoop filling into frozen crusts and smooth out the tops. Sprinkle lime zest over top and place into freezer for 2-3 hours before serving. Serve chilled.
