fresh & Easy coobook janet hornbyThere are several cookbooks every parent should own, and Fresh & Easy by Janet Hornby is one of them.  You will not find recipes for hiding vegetables in this delightful cookbook.  Instead, Hornby will show you how to simply prepare delicious, fresh ingredients for your family.  Even the pickiest kid cannot deny these dishes that you will have no trouble fitting into your busy schedule.  So give your child the benefit of the doubt and slide a plate of creamy zucchini, lemon & pea pasta on the lunch table.

For me, the difference between a good cookbook and a cookbook I will actually use is the photos.  I know how that sounds, but I really want to see quality photos of what my end result should be.  Whether my end result actually looks similar is a different story.  Not only will you get the final, gorgeous product in Fresh & Easy, but also detailed photos of the process.  Every recipe, nearly every step, all in photo form alongside the written directions.  Hornby is practically in your kitchen guiding you as you prepare these tasty dishes.

Speaking of dishes, the cookbook is broken up into chapters for types of meals, really focusing on entertaining.  Starting with Breakfast & Lunch, it continues through your day: Quick Lunches & Suppers, Picnics, Food for Friends, Barbecues, Sides & Salads, and Desserts & Baking.  While this cookbook is ideal for summer events, entertaining lasts throughout the year, making it relevant for any season. The recipes are very straightforward.  There is no over-the-top jargon or hard to find ingredients involved, just simple foods with complex flavors.

I especially have had fun with the picnic section as the weather is still gorgeous.  On our most recent trip out, our basket contained only food prepared according to Fresh & Easy.  We started with a perfect Gazpacho in a thermos which had a refreshing balance of heat and acid. For our main dish we devoured the delicious Pans Bagnats, which are essentially sandwiches of a Niçoise (my favorite salad).  Scooped baguettes are the ideal vessel for the classic combination of tuna, tomato, hard boiled egg and olives with savory roasted red peppers.  I could eat those any day of the week!  We kept desert simple with a refreshing, palate cleansing citrus-heavy fruit salad.  Everyone was so impressed with these Fresh & Easy recipes, and I was happy knowing I didn’t spend long at all preparing the lunch.
