Cinnamon Curry Tuna Salad {easy school lunch}

Every Sunday I make up at least one giant batch of food for the week.  This will be my go-to on busy nights or afternoons. If it works in a lunchbox, bonus points.  A favorite around this house is tuna salad, curried tuna salad in specific.  It transitions well for any meal, casual yet delicate and FULL of flavor, especially when you use quality Albacore from Bumble Bee!

Tuna salad is one of those dishes that is so easily customized.   I love to play around with the spices and added ingredients, be crunchy or chewy, but my family’s absolute favorite is curried.  For this week’s meal, I made Cinnamon Curry Tuna Salad to be served for an easy lunch or dinner, as well as a couple days of school lunch.  At home, I love to serve my tuna salad in a hollowed out bell pepper.  So easy to do, and great to munch on while eating the salad, the bell pepper bowl is always a hit with the kids (and adults!).

I mean… cute, right?

Have you thought about using cinnamon and curry powder in your tuna salad?  Maybe not, but the combination is so yummy – just the right amount of spice to balance the acidity of the recipe, swirled with lots of fresh, crispy ingredients.

My daughter, 7.5, has declared her love for themed lunches.  no pressure.  This lunchbox I have from Go Green Lunch Box is so perfect for themed lunches, i.e. ones your kid needs to assemble, be it fajitas, mini sandwiches or salads of all kinds.  To facilitate the tuna cracker lunch, I included crackers, lettuce, micro-greens (sprouts also perfect), thin carrot and cucumber.  Tomatoes are another great addition, as well as golden raisins, thinly sliced apples, almond slivers, sliced grapes… get creative! If you’d rather, include thin tortillas instead of crackers if your kid enjoys wraps — SO versatile!

She is really interested in the culinary world, convinced she will be on Chopped some day in the future — love her ambition!  With her interest in food, she loves to construct her lunch crackers.  I’ve found this is a great strategy for picky eaters… get them involved in the process and they will be more excited (and try new items)!

For this recipe, choose a quality tuna fish like Bumble Bee® Premium Albacore Tuna or Light Tuna, found in either pouches or cans.  Feel free to sub in whichever you prefer (or whichever style happens to be on sale that day!)  Check out Bumble Bee®‘s custom recipes for more dinner and school lunch ideas!

Cinnamon Curry Tuna Salad

Serves 4

2 (2.5 ounce) Bumble Bee® Premium Albacore Tuna in Water Pouch
2 tsp Dijon
3 tsp mayonnaise
1 heaping tablespoon pickle relish
1/4 cup finely diced green bell pepper
1 Tbl fresh lemon juice
1 tsp curry powder
1 tsp true cinnamon
1 tsp black pepper
1 tsp salt (or to taste)


In a medium-sized mixing bowl, combine the tuna, Dijon, mayonnaise, pickle relish, bell pepper, lemon juice,  curry powder, cinnamon, black pepper and salt. Cover, and refrigerate until ready to serve.  Garnish with micro-greens or sprouts.
