Creamy Cashew Gnocchi with Kale and (V) Sausage

We go through so many bags of MorningStar Farms® Sausage Patty Value Pack. They are not just great for breakfast though, in fact my favorite way to incorporate them is in pasta dishes like this gnocchi one. My son (the picky eater) finally decided he likes pasta so we have at least one pasta night every week. I try to keep our wheat intake low so I usually opt for gluten-free pasta or a GF gnocchi like I used in this dish.

I mentioned it before in another pasta post, but I really dislike red pasta sauce. It’s kind of bizarre, I know, but reds are not my favorite. What I do love is a creamy cashew sauce which is seemingly decadent but actually quite light and full of nutrition. When you’re vegan and you enjoy cooking, you become quite comfortable with cashews. Soaked/softened in water and blended with a nut milk, cashews create velvety sauces, creams, cheeses and butters. The best part is you can make a big batch at once and use it for different recipes throughout the week. In this Creamy Cashew Gnocchi with Kale recipe, they create a lovely pasta sauce that everyone (EVERYONE) in your house will love.

While the creamy sauce-covered gnocchi is comforting, the star of this dish is the MorningStar Farms® Sausage Patty crumbled throughout. It makes the dish heartier and perfect for busy, active families. To add another layer of flavor and texture, I like to also add MorningStar Farms® Bacon Strip, which I fry up crispy in a pan before. It adds a smoky flavor that gives the dish a new flavor layer and also a crunch (or chew depending on how long you cook it).

Creamy Cashew Gnocchi with Kale and (V) Sausage

  • 2 pkg gnocchi
  • 4 strips from MorningStar Farms® Bacon Strip
  • 4-5 patties from MorningStar Farms® Sausage Patty Value Pack
  • 1 bunch kale
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • several dashes liquid aminos (or sub tamari or soy sauce)
  • 1 1/2 cup cashews
  • 1 cup non-dairy milk
  • 2 tbl nutritional yeast
  • salt, pepper, to taste
  1. Soak cashews overnight in water to soften (in fridge) or quick soak by placing the cashews in hot (boiled) water for 30 minutes.
  2. In a large pot of salted, boiling water, cook gnocchi until they float. Remove and set aside in a bowl.
  3. Cook the sausage and bacon strips according to the packaging. Break the sausage into chunks, chop bacon and set aside.
  4. In a pan over medium heat, saute onion in  oil until translucent. Add garlic and cook for an additional minute. Add kale, liquid aminos and 1/4 cup of water. Cover and allow kale to cook/steam, careful not to burn the kale.
  5. While the kale is cooking, blend the softened cashews with non-dairy milk, nutritional yeast, salt and pepper until smooth and creamy.
  6. When the kale is ready (about 3-4 minutes) add gnocchi, sausage and cashew sauce. Stir to coat and combine. Top with bacon pieces and serve warm.
