Popcorn is pretty much my go-to snack when I’m craving something crunchy and salty… which is almost all the time.  I generally keep my popcorn plain and butterless but when family movie night rolls around, we go movie theater style.

I first fell in love with popcorn balls around Halloween time, specifically the caramel-flavored variety.  The perfect blend of sweet and savory, the salty, buttery goodness is undeniably good.  Over the years, I have tried to simplify my recipe and I think I’ve finally come to the perfect caramel popcorn ball.  With just a handful of ingredients, this is a super easy recipe anyone can whip up for their movie night.

Popcorn balls scream to be customized and are the perfect vessel for a whole host of ingredients.  Since it is summer and I’m in a tropical flavor mood, I went with coconut and mango.  Feel free to sub in your favorite dried fruits.

Coconut Mango Popcorn Balls

Ingredients

1 cup butter
1 cup brown sugar
half a bag marshmallow
2 bags Pop Secret popcorn
1/4 cup dried mango, diced
coconut flakes

Directions

  1. Pop both bags of popcorn and empty into a large bowl, sorting out any unpopped kernels into the trash.  In a saucepan over medium heat, melt the butter.  Add sugar and marshmallows, mixing and melting until all is incorporated.  Pour over popcorn and mix well.  Allow to cool off enough to handle.  Add in mango and mix again.
  2. Grease up your clean hands with a bit of butter or oil.  Grab handfuls of the popcorn mixture and press into a ball shape.  Do not pack too tightly, just enough to give it its shape.  Roll in shredded coconut and enjoy!

    I want to have a movie night at your house. I love soda in a glass bottle. Sometimes I burn popcorn and I just can’t eat it. I like the sound of this app, very cool.

    The crux of your writing while appearing reasonable in the beginning, did not really settle properly with me personally after some time. Someplace throughout the paragraphs you managed to make me a believer unfortunately only for a short while.
