Bacon & Date Pizzadilla with Gorgonzola Cheese and Rocket

Pizzadillas are often categorized as food for kids, but these quick and easy finger foods are perfect for adults as well.  When I don’t want to spend an eternity in the kitchen, the pizzadilla is a go-to for me.  Bring some fresh and sophisticated ingredients to entice the adult section… the kids will love them too!

My favorite spot to grocery shop is my Fresh & Easy Neighborhood Market. I remember when we moved near a Fresh & Easy for the first time.  It was love at first cart roll.  EVERYTHING is SO fresh and nicely packaged from produce to seafood.  The market is smaller and easy to navigate, you can check out on your own and the staff is always happy and helpful.  There is also family friendly parking right up front for those of us with little tots.  A+, Fresh & Easy.

We like to entertain, and while I like to imagine 7 course dinners, I rarely find time for 2 or 3.  I typically stick to appetizer type foods that are fast and tasty. Pizza is always fun with friends, but when you don’t have the time to mess with a dough — make a pizzadilla!  For this pizzadilla, I used a favorite combination of mine – sweet, salty, savory, bitter, fresh… in a word – yum.  All ingredients were found at Fresh & Easy Market.

Prep your food first, as always. We’re busy, so let’s keep the prep work simple, shall we?  Remove pits from dates, halve. Thinly slice the onion… done.

Cook your bacon first so you have bacon fat to caramelize your onions in…

A pizzadilla is so versatile — you can customize each one with whatever your guests would like.  Set up a filling station if you want and let each person create their own!

Once each is assembled, a quick cook on the skillet (like a quesadilla) and you are done.

Top with fresh arugula and a drizzle of raw organic honey for a bonus burst of flavor.

Bacon & Date Pizzadilla with Gorgonzola and Rocket

Serves: 4

Ingredients:

2 Tbs. olive oil, divided
1 yellow onion, thinly sliced
8 flour tortillas
4 ounces thick cut bacon
10-12 pitted dates, quartered lengthwise
4 ounces gorgonzola crumbles
large handful wild rocket
raw organic honey, optional

Directions:

In a medium size saute pan, add 1 tsp olive oil and heat over medium heat. When the oil is hot, add the bacon, flipping once, until all of the fat is rendered and bacon is crisp. Remove the bacon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over medium heat. Add the onions to the hot bacon fat and cook until the onions are soft and caramelized, about 15 minutes, stirring often. When 5 minutes remain, toss in the dates.

Assemble, starting with tortilla. Evenly distribute 1/4 of each bacon, dates, onions on top of tortilla. Top with crumbled gorgonzola and a few pieces of rocket. Cook on a skillet, flipping once browned. Cut and serve. Optional: top with fresh rocket and a drizzle of honey.
