apple zucchini bundt bread

I have two kids.  One is an adventurous eater who will try anything once and loves flavors from all over the world.  The other is the pickiest eater I’ve ever met.  He does not eat certain colors, certain textures and if a meal has too many ingredients (flavors) he vetoes it.  Sneaking nutrition into that kid is a full time job.  Quick breads have been a lifesaver with him since you can put just about anything in them.  Despite his aversion to anything green, Gabriel loves my zucchini bread!

My mom is known for her amazing zucchini bread.  It is absolutely delicious – moist and flavorful.  Whenever I make it for my kids now, I feel super nostalgic and homesick for my momma.  Food memories are the best, aren’t they?

Today I mixed her recipe up a bit (blasphemy, I know).  To the grated zucchini I added grated Granny Smith apples and in the batter also a Mott’s® Applesauce (original flavor).  These apple additions were the perfect way to mix up a classic recipe, adding a touch of sweet and a touch of tart.  I also added a sweet candy apple topping using Mott’s 100% Apple Juice 8oz Single Serve I just picked up at Target.

Another way I shook up this classic is by instead of using two loaf pans, I used a bundt pan.  You can always make this swap with any bread, especially quick breads.  Just add a bit more time in the oven.  When making food for picky kids, visual interest is important.  If they don’t like the way it looks, they won’t eat it – guaranteed.  If you add a bit of whimsy, they will eat a LOT of it – also guaranteed.

While the bread is cooling, flipped over and onto a rack, prepare your candy apple topping.  This is an optional step, but highly encouraged.  It is easy to do and adds more pleasant imagery to the dish – plus, it is de-li-cious!  In a pan over medium heat, melt butter.  Add in apple juice, sugar and thinly sliced apple wedges.  Just let the apples cook down until they are mostly translucent.  They will have a caramel candy flavor that kids won’t be able to resist!

Apple Zucchini Bundt Bread

  •      3 eggs, well beaten
  •      3/4 cup oil
  •      1/4 cup Mott’s Applesauce
  •      2 cups sugar (I used 1 cup brown, 1 cup white)
  •      2 cups grated zucchini, well drained
  •      1/2 cup grated Granny Smith apples, drained
  •      1 tsp vanilla
  •      3 cups flour
  •      1 tsp salt
  •      1/4 tsp baking powder
  •      1 tsp baking soda
  •      1 tsp freshly grated nutmeg
  •      1 tbl cinnamon

  •      1 large Granny Smith apple, thinly sliced
  •      2-3 Tbl butter
  •      8 oz Mott’s Apple Juice
  •      2-3 Tbl sugar
  1.     Mix together eggs, oil, Mott’s Applesauce, sugar, zucchini, apples and vanilla.  In a separate bowl, stir together flour, salt, baking powder, baking soda, nutmeg and cinnamon.  Add to first mixture.  Pour into greased and floured bundt pan (or two loaf pans).  Bake at 350 degrees for 50-60 minutes (less if using loaf pans) or until a toothpick can come out clean.
  2.     In a pan over medium heat, melt butter. Add sugar and apple juice, stir.  Add in apple slices and a saute until mostly translucent and the liquid has disappeared.  Top bread with the candy apples.
  3.     These freeze very well!
