apple & thyme holiday mocktail

I don’t know how it happened, but the holidays are coming! I’ve already begun some light decorating because I just cannot help myself. With Thanksgiving next week, I’ll be in full-on decorating, entertaining, holiday music mode before I know it. Isn’t this the most exciting time of the year?! For me, it just gets better and better as my two kiddos grow older. They always seem to be even more excited than the previous year. We’ve already begun the holiday cooking and the holiday mocktails, a favorite: the Apple & Thyme Holiday Mocktail.
Back when I used to take the time to make myself cocktails at home, a winter favorite for me was a Apple Cider, Thyme and Tonic. Apple is a warm and cozy flavor that goes well with cooler weather, so it’s always top of my list, and I really enjoy the fizz that tonic gives. A simpler and more kid-friendly way to do this is with Sparkling Ice Crisp Apple!
Mocktails should always be kept simple and this recipe is no different. The base of flavor comes from a homemade simple syrup infused with lemon zest and thyme, which is delicious BTW. A simple syrup with lemon will last for months in the fridge, so go ahead and make a nice size batch.
While the infused simple syrup is amazing, it is nothing without its fizzy counterpart – Sparkling Ice Crisp Apple. Garnish with a lemon and a couple sprigs of thyme and you’re good to go! This is a favorite mocktail of mine because it is sophisticated enough to please an adult crowd, but simple and tasty enough to be kid-approved. My son who will not touch a green vegetable (unless I juice it) L.O.V.E.S this mocktail – though he ditches the thyme sprig garnishes as soon as I’m not looking!

apple & thyme holiday mocktail
*recipe creates one pitcher
- 2 oz lemon thyme simple syrup*
- 2 oz lemon juice
- 2 Sparkling Ice Crisp Apple, plus more to top
- lemon wheel for garnish
- thyme for garnish
- In a pitcher combine simple syrup, lemon juice and Sparkling Ice Crisp Apple. Add ice to four glasses. Divide pitcher between the 4 glasses, top with more Sparkling Ice Crisp Apple if needed. Garnish with lemon and thyme.
* Lemon Thyme Simple Syrup
- 1/2 cup granulated sugar
- 1/2 cup water
- 3 sprigs thyme
- zest of one lemon
- Add all ingredients to a saucepan over low heat. Stir until sugar dissolves; simmer for 5 minutes. Remove from heat, remove thyme; allow to cool. Store in refrigerator.
