I’ve been on an on and off liquid diet (smoothies and soups mostly) for a few months now. The liquid diet hasn’t been a means of losing weight by any stretch. It has been an attempt at being healthier and getting a wide variety of vegetables and fruits crammed into my body. This is one of my favorite soup recipes as of late. I have always loved asparagus soup, but this one… it’s magic. Even my 4 year old loves this one.
Cream of Asparagus Soup
Trim the woody bottoms off 1 1/2 lbs of asparagus
Steam asparagus, reserve a couple pieces for garnish.
Blend the asparagus and 1 1/2 cups of chicken broth in a blender on high for one minute. Pour the mixture into a pot and heat until simmering. Stir in 1/2 cup half and half (or milk or a low fat yogurt).
Serve immediately, season with salt and pepper to taste and pop a few steamed pieces for garnish.
